Delightful mini muffins packed with ripe bananas and gooey chocolate chips, perfect for breakfast or an afternoon snack.

Ingredients

  • 2 ripe bananas, mashed
  • 1/3 cup melted butter
  • 1/2 cup sugar
  • 1 egg, beaten
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • Pinch of salt
  • 1 cup all-purpose flour
  • 1/2 cup chocolate chips

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a mini muffin tin.
  2. Mix the mashed bananas with melted butter.
  3. Stir in the sugar, beaten egg, and vanilla extract.
  4. Sprinkle the baking soda and salt into the mixture and mix well.
  5. Add the flour and stir until just combined.
  6. Fold in the chocolate chips.
  7. Pour the batter into the prepared muffin tin, filling each cup about 2/3 full.
  8. Bake for 10-12 minutes, or until a toothpick comes out clean.
  9. Let cool before serving.

Notes

Use very ripe bananas for sweeter, moister muffins. Don’t overmix the batter for light, fluffy muffins.
