Ingredients

  • Beef short ribs
  • Salt
  • Black pepper
  • Olive oil
  • Onion
  • Garlic
  • Carrots
  • Celery
  • Beef broth
  • Red wine
  • Thyme
  • Rosemary
  • Bay leaves

Instructions

  1. Preheat your oven to 300°F (150°C).
  2. Generously season the beef short ribs with salt and black pepper.
  3. In a large oven-safe pot, heat olive oil over medium-high heat and brown the short ribs on all sides (about 5-7 minutes). Remove and set aside.
  4. In the same pot, add chopped onion, garlic, carrots, and celery; sauté until softened (about 5-6 minutes).
  5. Deglaze the pot with red wine, scraping up browned bits stuck to the bottom.
  6. Add beef broth, thyme, rosemary, and bay leaves; stir to combine.
  7. Return the browned short ribs to the pot and bring the mixture to a gentle simmer.
  8. Cover the pot and transfer it to the preheated oven.
  9. Cook for 2.5 to 3 hours until the ribs are tender.
  10. Remove from the oven and let the pot rest for about 10 minutes before serving.

Notes

Serve over creamy mashed potatoes or polenta, and consider adding a splash of soy sauce for an umami kick.
