A refreshing and nutritious dish featuring creamy avocados filled with a zesty tuna salad.

Ingredients

  • 2 ripe avocados
  • 1 can of tuna, drained
  • 1/4 cup cherry tomatoes, diced
  • 1/4 cup cucumber, diced
  • 1/4 red onion, finely chopped
  • 1/4 cup Kalamata olives, sliced
  • 2 tablespoons feta cheese, crumbled
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Cut the avocados in half and remove the pit. Scoop out a little bit of the flesh to create a larger cavity for the filling.
  2. In a bowl, mix together the tuna, cherry tomatoes, cucumber, red onion, olives, and feta.
  3. Drizzle with olive oil and lemon juice. Season with salt and pepper, then mix until combined.
  4. Spoon the tuna salad into the avocado halves.
  5. Garnish with fresh parsley and serve immediately.

Notes

For best flavor, use high-quality tuna packed in olive oil. Fill avocados just before serving to prevent browning.
