A vibrant and flavorful stir fry that captures the essence of Mediterranean cuisine with juicy chicken, colorful vegetables, and zesty herbs.

  • 1.5 lbs Chicken breasts, boneless & skinless, cut into bite-sized pieces
  • 3 tablespoons Extra virgin olive oil, divided
  • Salt & black pepper, to taste
  • 2 medium Zucchini, sliced into half-moons
  • 2 Red bell peppers, diced into chunks
  • 1 large Red onion, sliced into strips
  • 2 cups Cherry tomatoes, halved
  • 1 cup Kalamata olives, pitted and halved
  • 4 cloves Garlic, minced
  • ¼ cup Sun-dried tomatoes, chopped
  • 2 teaspoons Dried oregano
  • 1 teaspoon Dried basil
  • ½ teaspoon Dried thyme
  • 1 Lemon, juice only
  • 0.5 cup Feta cheese, crumbled
  • 2 tablespoons Fresh parsley, optional garnish

Instructions

  1. Preparation of Ingredients: Wash and chop the vegetables into required shapes.
  2. Heat the Oil: In a large skillet, heat 2 tablespoons of olive oil over medium-high heat.
  3. Season and Cook the Chicken: Season the chicken with salt, pepper, and half of the oregano. Cook until golden brown, about 7-8 minutes.
  4. Set Aside the Chicken: Remove the chicken from the skillet and set aside.
  5. Sauté Onions and Garlic: Add remaining olive oil, onion, and garlic to the skillet. Sauté until the onion is translucent, about 3-4 minutes.
  6. Add Veggies: Introduce zucchini, bell peppers, and sun-dried tomatoes. Stir and cook until tender yet crisp.
  7. Combine Everything: Return the chicken to the skillet, add cherry tomatoes, olives, remaining herbs, and lemon juice. Stir and heat through for another 2 minutes.
  8. Garnish and Serve: Sprinkle feta cheese and chopped parsley on top before serving.

Notes

Store leftovers in an airtight container for up to 3 days. For best flavor, reheat gently in a skillet.
