  • 8 ounces pasta (penne or fettuccine)
  • 1 cup cherry tomatoes, halved
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1 cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • Salt and pepper to taste
  • Fresh basil for garnish

Instructions

  1. Cook the pasta according to package instructions, then drain and set aside.
  2. Heat olive oil over medium heat in a skillet. Season the chicken breasts with salt and pepper, then add to the skillet. Cook for about 6-7 minutes per side until golden and cooked through. Remove from the skillet and set aside.
  3. Sauté minced garlic in the same skillet for about 1 minute, letting its aroma awaken your senses.
  4. Add cherry tomatoes and cook for 2-3 minutes until they start to soften and release their juices.
  5. Pour in the heavy cream and chicken broth, bringing it to a gentle simmer.
  6. Stir in the grated Parmesan cheese until melted and smooth.
  7. Slice the cooked chicken and add it back to the skillet, along with the cooked pasta. Toss to combine the flavors.
  8. Garnish with fresh basil before serving.

Notes

For added flavor, pair with a crisp green salad and a glass of white wine. Leftovers can be stored in an airtight container for up to 3 days.
