These delightful muffins combine sweet maple syrup with crispy beef bacon for a unique breakfast experience.

Ingredients

  • 2 tablespoons granulated sugar
  • 2 teaspoons baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • 1 large egg
  • 1 cup buttermilk
  • ¼ cup maple syrup, plus more for serving
  • 2 tablespoons melted unsalted butter
  • ½ cup cooked and crumbled beef bacon

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Grease your muffin tin or line it with muffin liners.
  3. In a large bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
  4. In another bowl, whisk the egg, buttermilk, maple syrup, and melted butter together until smooth.
  5. Gently fold the wet ingredients into the dry mixture until just combined.
  6. Fold in the crumbled beef bacon evenly into the batter.
  7. Spoon the batter into muffin cups, filling them about two-thirds full.
  8. Bake for 18-22 minutes until golden brown and a toothpick inserted comes out clean.
  9. Allow muffins to cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.

For best results, choose high-quality beef bacon. Store leftovers in an airtight container at room temperature for up to 3 days.
