Deliciously moist muffins made with ripe bananas and Greek yogurt, perfect for a healthy breakfast or snack.

  • 1 cup all-purpose flour
  • 1/2 cup rolled oats
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1 medium ripe banana
  • 1/2 cup Greek yogurt
  • 1/4 cup honey or maple syrup
  • 1 large egg
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Line a muffin tin with parchment paper or spray it with cooking spray.
  3. In a mixing bowl, whisk together the flour, oats, baking soda, baking powder, cinnamon, and salt.
  4. Mash the banana in another bowl until smooth.
  5. Add Greek yogurt, honey (or maple syrup), the egg, and vanilla to the mashed banana and mix well.
  6. Pour the wet mixture into the dry ingredients and gently fold together until just combined.
  7. Fill each muffin cup about 3/4 full with the batter.
  8. Bake for 18-20 minutes, or until golden brown and a toothpick comes out clean.
  9. Let them cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.

Notes

For added texture, consider adding walnuts or dark chocolate chips to the batter. Store leftovers in an airtight container for up to 3 days.
