A delicious blend of fluffy baked potatoes stuffed with seasoned taco meat and vibrant toppings, perfect for cozy family dinners.

Ingredients

  • 4 large russet potatoes
  • 1 pound ground beef or turkey
  • 1 packet taco seasoning
  • 1 cup shredded cheddar cheese
  • 1 cup sour cream
  • 1 cup diced tomatoes
  • 1/2 cup sliced green onions
  • 1 cup shredded lettuce
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C). Wash and pierce the potatoes, then bake for 45-60 minutes until tender.
  2. In a skillet, cook the ground beef or turkey until browned. Drain excess fat.
  3. Add taco seasoning and follow package instructions, letting it simmer for a few minutes.
  4. Once potatoes are baked, let them cool then slice open.
  5. Fluff the insides of the potatoes and season with salt and pepper.
  6. Spoon the meat mixture over each potato and top with cheese, sour cream, tomatoes, green onions, and lettuce.
  7. Serve hot and enjoy!

Notes

These potatoes can be made ahead of time, and any leftovers should be stored separately.
