Delicious muffins swirled with sweetened cream cheese and zesty lemon flavors.

Ingredients

  • 2 cups all-purpose flour
  • 3/4 cup granulated sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • Zest of 1 lemon
  • 1/2 cup milk
  • 1/2 cup vegetable oil or melted butter
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/4 cup fresh lemon juice
  • 8 oz cream cheese, softened
  • 1/4 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon lemon zest
  • 1 cup powdered sugar (for glaze)
  • 2 to 3 tablespoons fresh lemon juice (for glaze)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, whisk together the all-purpose flour, granulated sugar, baking powder, baking soda, salt, and the zest of one lemon.
  3. In another bowl, whisk the milk, vegetable oil (or melted butter), eggs, vanilla extract, and fresh lemon juice until smooth.
  4. Gently fold the wet ingredients into the dry mixture.
  5. In a separate bowl, beat the softened cream cheese with powdered sugar, vanilla extract, and lemon zest until creamy and smooth.
  6. Fill the muffin cups halfway with the batter, then add a spoonful of the cream cheese mixture, and top with the remaining batter.
  7. Using a toothpick, gently swirl the cream cheese mixture into the batter.
  8. Bake for 18 to 22 minutes, until the muffins are lightly golden and a toothpick comes out clean.
  9. Let the muffins cool slightly before drizzling with the lemon glaze made from mixing powdered sugar with fresh lemon juice.

Notes

For an extra zing, add a pinch of ginger or cardamom to the batter. Leftovers can be stored in an airtight container for up to 3 days.
