Delightful cookies blending the creamy tastes of cheesecake with refreshing lemon, perfect for any occasion.

Ingredients

  • 2 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup unsalted butter, softened
  • 1 cup cream cheese, softened
  • 1 cup granulated sugar
  • 1/2 cup powdered sugar
  • 1 tablespoon lemon zest (about 1 medium lemon)
  • 2 tablespoons lemon juice (fresh is best!)
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon almond extract

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Whisk together flour, baking soda, and salt in a medium bowl. Set aside.
  3. Cream together softened butter, cream cheese, granulated sugar, and powdered sugar in a large bowl.
  4. Mix in lemon zest, lemon juice, vanilla extract, and almond extract until combined.
  5. Combine the dry ingredients with the wet ingredients, mixing until just combined.
  6. Shape dough into tablespoon-sized balls and place on a baking sheet.
  7. Bake for 10-12 minutes or until lightly golden on the edges.
  8. Allow to cool on a wire rack after removing from the oven.

Notes

Store cookies in an airtight container at room temperature for up to a week. They can also be frozen for up to 3 months.
