Ingredients

  • 1 cup rolled oats
  • 1/2 cup almond butter or peanut butter
  • 1/4 cup honey or maple syrup
  • 1/2 cup blueberries (fresh or dried)
  • Zest of 1 lemon
  • Juice of 1 lemon
  • 1/4 cup protein powder (optional)
  • Pinch of salt

Instructions

  1. Combine the rolled oats, almond butter, honey, and lemon juice and zest in a mixing bowl.
  2. Stir until well mixed.
  3. Fold in blueberries gently.
  4. Add protein powder and a pinch of salt, then mix until combined.
  5. Chill the mixture in the refrigerator for about 30 minutes.
  6. Roll the mixture into bite-sized balls.
  7. Store in an airtight container in the fridge for up to a week.
