  • 1/4 teaspoon salt
  • 1/2 cup sugar
  • 1/4 cup unsalted butter, softened

  • 1 teaspoon vanilla extract
  • 1/2 cup milk
  • 1 tablespoon lemon juice
  • 1 tablespoon lemon zest
  • 1 cup fresh blueberries

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9×5 inch loaf pan.
  2. Mix together the flour, baking powder, baking soda, and salt.
  3. Cream together the sugar and softened butter until fluffy.
  4. Beat in the egg, then stir in the vanilla extract, milk, lemon juice, and lemon zest.
  5. Combine the dry ingredients with the wet mixture until just combined.
  6. Fold in the fresh blueberries gently.
  7. Pour the batter into the prepared loaf pan.
  8. Bake for 50-60 minutes or until a toothpick comes out clean.
  9. Cool before slicing.
