A flavorful and tender chicken shawarma marinated in warm spices and served with fresh toppings in pita bread.

Ingredients

  • 2 lbs boneless chicken thighs
  • 4 cloves garlic, minced
  • 2 tsp ground cumin
  • 2 tsp ground coriander
  • 2 tsp ground paprika
  • 1 tsp ground turmeric
  • 1 tsp ground cinnamon
  • Salt and pepper to taste
  • 1/4 cup olive oil
  • 1/4 cup plain yogurt
  • Juice of 1 lemon
  • Pita bread, for serving
  • Toppings: sliced tomatoes, cucumber, lettuce, pickles, tahini sauce

Instructions

  1. Prepare the Marinade: In a large bowl, mix together garlic, cumin, coriander, paprika, turmeric, cinnamon, salt, pepper, olive oil, yogurt, and lemon juice.
  2. Marinate the Chicken: Add chicken thighs to the marinade and coat well. Cover and refrigerate for at least 1 hour or overnight.
  3. Preheat the Grill: Preheat a grill or skillet over medium-high heat.
  4. Cook the Chicken: Grill each thigh for 5-7 minutes on each side until cooked through and charred.
  5. Let it Rest: Allow the chicken to rest before slicing into strips.
  6. Assemble Your Shawarma: Serve chicken in warm pita with fresh toppings and enjoy!

Notes

Marinating overnight enhances the flavor. Customize toppings to your preference.
