A simple, savory, and crustless quiche that’s perfect for a low-carb lifestyle, packed with wholesome ingredients.

Ingredients

  • 6 large eggs
  • 1 cup heavy cream
  • 1 cup shredded cheese (cheddar or mozzarella)
  • 1 cup mushrooms, sliced
  • 1 cup cherry tomatoes, halved
  • 1/2 cup onion, diced
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh herbs (optional, like parsley or basil)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a skillet, heat olive oil over medium heat. Add diced onions and sauté until translucent (3-4 minutes).
  3. Add sliced mushrooms to the skillet and cook until softened (5-7 minutes).
  4. In a mixing bowl, whisk together the eggs and heavy cream. Season with salt and pepper.
  5. Mix the sautéed onion and mushroom mixture into the egg mixture, then stir in the shredded cheese.
  6. Pour the mixture into a greased baking dish and top with halved cherry tomatoes, cut-side up.
  7. Bake for 30-35 minutes until set and golden on top.
  8. Let cool for a few minutes before slicing and serving.

Notes

Serve with a side salad or bacon for a heartier meal. Leftovers can be stored in the fridge for up to 3 days.
