A creamy and cheesy dish featuring roasted Brussels sprouts, topped with crispy bacon, perfect for a keto lifestyle.

  • 2 pounds Brussels sprouts
  • 1 cup heavy cream
  • 1/2 cup shredded mozzarella cheese
  • 1/2 cup shredded cheddar cheese
  • 2 tbsp butter
  • 2 tbsp olive oil
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • Pinch nutmeg
  • 4 slices bacon (chopped)

Instructions

  1. Preheat the oven to 400°F.
  2. Slice the Brussels sprouts in half and toss them with olive oil, salt, and pepper.
  3. Spread the Brussels sprouts on a baking sheet in a single layer and roast for 15 to 20 minutes.
  4. In a saucepan over medium heat, combine heavy cream, mozzarella cheese, cheddar cheese, and a pinch of nutmeg.
  5. Once the Brussels sprouts are roasted, transfer them to a baking dish.
  6. Pour the cheese sauce over the sprouts.
  7. Sprinkle the chopped bacon across the top.
  8. Lower the oven temperature to 375°F and bake for about 15 minutes.

Notes

For a vegetarian option, substitute bacon with tempeh or mushrooms.
