Delicious and nutritious flatbreads made with cottage cheese and spinach, perfect for breakfast or as a snack.

  • 1 cup cottage cheese
  • 1 cup spinach, cooked and chopped
  • 1 cup all-purpose flour or almond flour for a gluten-free option
  • 1 teaspoon baking powder
  • 1 large egg
  • 1/2 teaspoon salt
  • 1/2 teaspoon garlic powder (optional)
  • Sesame seeds or everything bagel seasoning for topping

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Combine cottage cheese, cooked spinach, flour, baking powder, egg, salt, and garlic powder (if using) in a mixing bowl, and mix until a dough forms.
  3. Divide the dough into equal portions and shape each portion into a bagel shape.
  4. Place the flatbreads on a baking sheet lined with parchment paper.
  5. Sprinkle sesame seeds or everything bagel seasoning on top of each flatbread.
  6. Bake for 15-20 minutes, or until golden brown.
  7. Let cool slightly before serving.

Notes
