  • 2 chicken breasts
  • 1 cup pico de gallo (diced tomatoes, onions, cilantro, jalapeños, and lime juice)
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Tortilla chips or tortillas for serving
  • Lime wedges for serving

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Drizzle the chicken breasts with olive oil, then season generously with salt and pepper.
  3. Place the seasoned chicken in a baking dish.
  4. Spoon the fresh pico de gallo generously over the chicken.
  5. Sprinkle shredded cheese all over the pico de gallo.
  6. Bake in the preheated oven for 25-30 minutes, or until the chicken is fully cooked (165°F internally) and the cheese is bubbly and golden.
  7. Serve hot, accompanied by tortilla chips or wrapped in tortillas with lime wedges.

Notes

For extra flavor, add chili powder or cumin before baking. Store leftovers in an airtight container for up to 3 days.
