A warm and hearty frittata featuring beef bacon, golden potatoes, and creamy cheddar, perfect for brunch or family dinner.

  • 8 large eggs
  • 6 strips beef bacon, chopped
  • 2 medium potatoes, diced
  • 1/2 cup heavy cream
  • 1/4 cup fresh chives, chopped
  • 1/2 cup cheddar cheese, grated
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. Heat olive oil in a skillet over medium heat. Add diced potatoes and cook until golden brown.
  2. Push the golden potatoes to the side of the skillet and add the chopped beef bacon. Cook until crispy.
  3. Mix in the chopped chives and cook for another 2 minutes.
  4. In a bowl, whisk together the eggs, heavy cream, salt, and pepper.
  5. Pour the egg mixture over the skillet, ensuring it envelops the bacon and potatoes. Sprinkle the grated cheddar cheese on top.
  6. Cook on low heat until the edges set, then transfer to the oven at 375°F for 10-15 minutes.
  7. Let the frittata cool slightly before slicing into wedges. Serve warm.
