A creamy, savory dip that evokes childhood memories, perfect for gatherings and parties.

Ingredients

  • 8 large eggs
  • 1 cup mayonnaise
  • 2 teaspoons Dijon mustard
  • 1 teaspoon hot sauce (optional)
  • 1 teaspoon paprika (plus extra for garnish)
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and black pepper to taste
  • 1 cup shredded sharp cheddar cheese
  • 4 slices cooked beef bacon, crumbled
  • 2 green onions, finely chopped
  • Crackers, chips, or toasted bread slices, for serving

Instructions

  1. Place 8 large eggs in a saucepan and cover with cold water. Bring to a boil, then remove from heat and let sit for 12 minutes.
  2. Prepare an ice bath and transfer eggs to cool for 5-10 minutes. Peel under running water.
  3. Halve each egg and scoop yolks into a bowl, placing egg whites aside.
  4. Mash the yolks until smooth.
  5. Add mayonnaise, Dijon mustard, hot sauce, paprika, garlic powder, onion powder, salt, and pepper to the yolks. Mix until creamy.
  6. Finely chop egg whites and fold into the mixture with cheese, crumbled bacon, and green onions.
  7. Chill dip for at least 30 minutes.
  8. Garnish and serve with dippers.

Notes

For a lighter version, substitute Greek yogurt for mayonnaise. Feel free to customize with different cheeses or spices.
