Delicious muffins that capture the comforting flavors of peach cobbler, perfect for breakfast or a sweet treat.

  • 2 cups all-purpose flour
  • 1 cup sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, melted
  • 1 cup milk
  • 1 large egg
  • 2 cups fresh peaches, diced
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a muffin tin.
  2. Combine the flour, sugar, baking powder, and salt in a large bowl.
  3. Mix together the melted butter, milk, and egg in another bowl.
  4. Pour the wet ingredients into the dry ingredients and stir gently until just combined.
  5. Fold in the diced peaches, cinnamon, and nutmeg without breaking them up too much.
  6. Divide the batter evenly among the muffin cups, filling each about 2/3 full.
  7. Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.
  8. Allow the muffins to cool for a few minutes before transferring to a wire rack.

Best enjoyed fresh, these muffins can be stored at room temperature for up to 2 days or frozen for up to 3 months.
