A beautiful twist on a classic bread, soft, buttery, and warmly inviting, perfect with soups or enjoyed on its own.

Ingredients

  • 2 cups mashed potatoes
  • 2 cups all-purpose flour
  • 1/4 cup unsalted butter
  • 1 teaspoon salt
  • 1/2 teaspoon baking powder
  • 1/4 cup milk
  • 1 egg

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Combine the mashed potatoes, flour, baking powder, and salt in a mixing bowl.
  3. Melt the unsalted butter and mix it with the milk and egg in another bowl.
  4. Add the wet mixture to the dry ingredients and stir until a dough forms.
  5. Turn the dough onto a floured surface and knead gently.
  6. Shape the dough into a round loaf and place it onto a baking sheet lined with parchment paper.
  7. Score a cross on the top of the loaf with a sharp knife.
  8. Bake for 30-35 minutes until golden brown.
  9. Let it cool slightly before slicing.
  10. Serve warm with butter or alongside your favorite stew.

Notes

Use leftover mashed potatoes for best results. Avoid over-kneading to keep the bread fluffy. Experiment with herbs or cheese for added flavor.
