  • 2 eggs, beaten
  • 1 cup mixed vegetables (carrots, peas, corn)
  • 3 green onions, chopped
  • 3 tablespoons soy sauce

  • Salt and pepper to taste

Instructions

  1. Heat the vegetable oil in a large skillet or wok over medium-high heat.
  2. Add the beaten eggs and scramble them until fully cooked. Remove the eggs and set them aside.
  3. In the same skillet, add a bit more oil if necessary, and toss in the mixed vegetables. Stir-fry for 2-3 minutes until they are vibrant and tender.
  4. Add the cooked rice, soy sauce, and sesame oil to the skillet, stirring to ensure everything is combined beautifully.
  5. Add the scrambled eggs back into the skillet along with the chopped green onions. Stir-fry for another 2-3 minutes, allowing the flavors to meld.
