A delightful and easy lemon loaf bursting with bright lemon flavor, perfect for any occasion.

Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 2 tablespoons lemon juice
  • 1 tablespoon lemon zest
  • 1/2 cup buttermilk
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a loaf pan.
  2. Whisk together the flour, baking powder, baking soda, and salt in a medium bowl.
  3. Cream together the softened butter and sugar until light and fluffy in a large bowl.
  4. Add the eggs one at a time, mixing well after each addition.
  5. Stir in the lemon juice, lemon zest, buttermilk, and vanilla extract.
  6. Combine the dry ingredients with the wet mixture until just combined.
  7. Pour the batter into the prepared loaf pan and smooth the top.
  8. Bake for 50-60 minutes, or until a toothpick inserted in the center comes out clean.
  9. Allow to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.

Notes

For an extra zesty kick, increase the lemon zest or add a simple lemon glaze on top after cooling.
