A creamy, savory chicken dish infused with sun-dried tomatoes that’s perfect for impressing loved ones.

Ingredients

  • 3/4 cup chicken bone broth
  • 1/2 cup heavy cream
  • 1/4 cup whole milk cottage cheese
  • 2 Tbsp chopped sun-dried tomatoes
  • 2 Tbsp finely grated Parmesan, plus more for serving
  • 1 tsp tomato paste
  • Kosher salt
  • Freshly ground black pepper
  • 4 (6-oz.) boneless, skinless chicken cutlets
  • 2 Tbsp all-purpose flour
  • 1 tsp Italian seasoning
  • 2 Tbsp extra-virgin olive oil
  • 1 Tbsp unsalted butter
  • 2 garlic cloves, finely chopped
  • 1/4 tsp crushed red pepper flakes

Instructions

  1. Season the chicken cutlets with salt, black pepper, and flour.
  2. In a skillet, heat olive oil and butter over medium-high heat. Sear the chicken until golden brown, about 5-7 minutes per side. Remove and set aside.
  3. In the same skillet, sauté garlic until fragrant, about 1 minute.
  4. Add chicken bone broth, heavy cream, cottage cheese, sun-dried tomatoes, tomato paste, Italian seasoning, and crushed red pepper flakes. Simmer until thickened.
  5. Return chicken to the skillet, spoon sauce over it, and simmer for an additional 2-3 minutes.
  6. Plate the chicken, spoon rich sauce over each piece, and serve with grated Parmesan.

Notes

Rest the chicken for 5 minutes after cooking for maximum juiciness. Adjust crushed red pepper for spice level.
