A delicious and healthy fusion of jalapeno poppers and chicken salad, packed with protein and flavor.

Ingredients

  • 3 cups cooked shredded chicken
  • 4 jalapeños, diced
  • 6 slices bacon, cooked & crumbled
  • 1 cup Greek yogurt
  • 2 oz cream cheese, softened
  • 1 cup shredded cheddar cheese
  • ½ tsp garlic powder
  • ½ tsp paprika
  • Salt & pepper to taste
  • Fresh herbs (parsley or chives) for garnish

Instructions

  1. In a large bowl, combine the Greek yogurt and softened cream cheese until smooth.
  2. Stir in garlic powder, paprika, salt, and pepper.
  3. Fold in your cooked shredded chicken, diced jalapeños, and crumbled bacon.
  4. Cover the bowl and chill in the refrigerator for 30 minutes.
  5. Garnish with fresh herbs and serve as desired.

Notes

This salad can be made ahead of time, and leftovers can be stored in the fridge for up to 2 days.
