Easy and delicious quesadillas featuring a high-protein chicken and ranch filling, perfect for a quick meal.

Ingredients

  • 2 large chicken breasts, cooked and shredded
  • 1 cup shredded cheese (cheddar or mozzarella)
  • 1/2 cup ranch dressing
  • 4 low-carb tortillas
  • 1 tablespoon olive oil
  • 1/2 cup diced bell peppers (optional)
  • 1/2 cup sliced green onions (optional)
  • Salt and pepper to taste

Instructions

  1. In a bowl, mix the shredded chicken with ranch dressing until well combined.
  2. Heat a skillet over medium heat and add olive oil.
  3. Place one tortilla in the skillet, then layer half of the chicken mixture and half of the cheese on top.
  4. If using, add diced bell peppers and green onions on top.
  5. Top with another tortilla.
  6. Cook for 4-5 minutes on each side, or until golden and crispy, and the cheese is melted.
  7. Repeat with remaining ingredients.
  8. Slice into wedges and serve hot.

Notes

Serve with ranch or salsa. Store leftovers in an airtight container for up to 3 days.
