A delicious and satisfying quesadilla filled with shredded chicken, ranch dressing, cheese, and vibrant veggies, offering a crispy exterior and creamy interior.

Ingredients

  • 2 cups shredded cooked chicken
  • 1/2 cup ranch dressing
  • 2 large low-carb tortillas
  • 1 cup shredded cheese (cheddar or mozzarella)
  • 1/2 cup diced bell peppers
  • 1/4 cup chopped green onions
  • 1 tablespoon olive oil

Instructions

  1. In a mixing bowl, combine the shredded cooked chicken with the ranch dressing.
  2. Fold in the diced bell peppers and chopped green onions.
  3. Lay one tortilla flat in a skillet over medium heat and spread half of the chicken mixture evenly on it.
  4. Sprinkle half of the shredded cheese over the chicken mixture.
  5. Top with the second tortilla and press down gently.
  6. Drizzle olive oil around the edges of the quesadilla.
  7. Cook for about 3-4 minutes until the bottom is golden.
  8. Flip the quesadilla and cook for another 3-4 minutes until both sides are crispy and the cheese is melted.
  9. Slice into wedges and serve hot.
