A flavorful Protein Burrito Casserole that combines tender chicken, rice, and zesty beans, all baked under a delicious layer of melted cheese.

Ingredients

  • 2 cups cooked chicken, shredded
  • 2 cups cooked rice
  • 1 can black beans, drained and rinsed
  • 1 cup corn kernels (fresh or frozen)
  • 1 cup salsa
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • Salt and pepper to taste
  • Chopped cilantro for garnish (optional)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Combine the shredded chicken, cooked rice, black beans, corn, salsa, cumin, chili powder, salt, and pepper in a large mixing bowl.
  3. Stir until well combined.
  4. Transfer the mixture to a greased 9×13 inch baking dish and spread it out evenly.
  5. Sprinkle the shredded cheese evenly over the top.
  6. Bake for 25-30 minutes, or until the cheese is bubbly and golden.
  7. Remove from the oven and let it cool for a few minutes.
  8. Garnish with chopped cilantro if desired and serve warm.

Notes

Customize with leftover vegetables or proteins. Can be made spicier with jalapeños or different salsa.
