  • 4 boneless, skinless chicken breasts
  • 1 cup honey BBQ sauce
  • 2 pounds potatoes, peeled and diced
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 4 cloves garlic, minced
  • Salt and pepper to taste
  • Olive oil

Instructions

  1. Preheat your grill to medium-high heat.
  2. Season the chicken breasts with salt and pepper and brush with olive oil.
  3. Grill the chicken for 6-7 minutes on each side until the internal temperature reaches 165°F (75°C), brushing with honey BBQ sauce in the last few minutes.
  4. Boil salted water in a large pot and add diced potatoes. Cook until tender, about 15 minutes, then drain.
  5. Return the drained potatoes to the pot, add heavy cream, grated Parmesan, and minced garlic. Mash until creamy.
  6. Serve the grilled chicken alongside the creamy garlic Parmesan potatoes, drizzling extra honey BBQ sauce on the chicken.
