A warm, moist cake bursting with the comforting flavor of ripe bananas and crunchy walnuts, topped with luscious whipped cream.

  • 3 ripe bananas
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup walnuts, chopped
  • 1 cup heavy cream
  • 2 tablespoons powdered sugar

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
  2. Cream together the softened butter and sugar until light and fluffy.
  3. Add in the eggs, one at a time, beating well after each addition, then mix in the mashed bananas and vanilla extract.
  4. Combine the flour, baking powder, baking soda, and salt in another bowl, then gradually add this dry mixture to the wet mixture.
  5. Fold in the chopped walnuts gently.
  6. Pour the batter into the prepared cake pan and smooth the top with a spatula.
  7. Bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean. Allow to cool for 10 minutes.
  8. Whip the heavy cream and powdered sugar together until soft peaks form.
  9. Spread or pipe the whipped cream on top of the cooled cake and garnish with extra walnuts if desired.
  10. Slice and enjoy your delicious cake!

Notes

For best flavor, use very ripe bananas. Store the cake in an airtight container at room temperature for up to 3 days.
