  • 1 cup barley
  • 1 large onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 6 cups beef broth
  • 1 can (14.5 oz) diced tomatoes
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Fresh parsley for garnish

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the beef cubes and brown on all sides, locking in that delicious flavor.
  2. Next, toss in the chopped onions, diced carrots, diced celery, and minced garlic. Sauté until the vegetables soften, filling your kitchen with a delightful aroma.
