  • 2 ripe bananas, mashed
  • 1/2 cup peanut butter
  • 1/4 cup honey or maple syrup
  • 1/2 cup Greek yogurt or applesauce
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 1/2 cups whole wheat flour
  • 1/2 cup chocolate chips or nuts (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with liners.
  2. In a large bowl, mix together the mashed bananas, peanut butter, honey (or maple syrup), Greek yogurt (or applesauce), eggs, and vanilla extract until smooth.
  3. In another bowl, combine the baking soda, baking powder, salt, and whole wheat flour.
  4. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  5. Fold in the chocolate chips or nuts if using.
  6. Divide the batter evenly among the muffin cups, filling them about 3/4 full.
  7. Bake for 18-20 minutes or until a toothpick comes out clean.
  8. Let cool for a few minutes in the pan before transferring to a wire rack to cool completely.
