Ingredients

  • 1 cup rolled oats
  • 1/2 cup almond flour
  • 1/4 cup honey or maple syrup
  • 1/4 cup coconut oil or unsalted butter, melted
  • 1 tsp cinnamon
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup almond milk or any milk of choice
  • 1 tsp vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Combine frozen blueberries with honey or maple syrup and set aside.
  3. Mix rolled oats, almond flour, cinnamon, baking powder, and salt in a bowl.
  4. Pour in melted coconut oil and almond milk, stirring until combined.
  5. Grease a baking dish and spread the blueberry mixture evenly at the bottom.
  6. Pour the oat mixture over the blueberries.
  7. Bake for 25-30 minutes or until golden brown.
  8. Let it cool slightly before serving.

Notes
