Delicious and nutritious muffins made with ripe bananas and rolled oats, perfect for breakfast or as a snack.

Ingredients

  • 2 ripe bananas, mashed
  • 1 cup rolled oats
  • 1/2 cup milk (or almond milk)
  • 1/4 cup honey or maple syrup
  • 1/4 cup vegetable oil or melted coconut oil
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • Optional: chopped nuts or chocolate chips

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners to keep the muffins from sticking.
  2. Mix the mashed bananas, milk, honey, oil, and vanilla until well combined.
  3. Combine the rolled oats, baking powder, baking soda, cinnamon, and salt in another bowl.
  4. Add the dry ingredients to the wet ingredients, mixing until just combined.
  5. Fold in nuts or chocolate chips if desired.
  6. Divide the batter evenly among the muffin cups, filling them about two-thirds full.
  7. Bake for 18-20 minutes or until a toothpick comes out clean.
  8. Cool in the tin for a few minutes before transferring to a wire rack.

Notes

Store in an airtight container at room temperature for up to 3 days, or freeze for up to 3 months.
