Healthier Broccoli Chicken Casserole

A delicious and healthier take on classic broccoli chicken casserole, packed with protein and fiber.

Ingredients

  • 8 ounces uncooked whole-wheat rotini
  • 1 large head of broccoli, cut into bite-sized florets
  • 2 tablespoons butter or olive oil
  • 1 small white onion, thinly sliced
  • 8 ounces baby bella (cremini) mushrooms, thinly sliced
  • 4 cloves garlic, minced
  • 3 tablespoons flour
  • 1 cup chicken or vegetable stock
  • 1 1/2 cups milk
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon fine sea salt
  • 1/4 teaspoon freshly-cracked black pepper
  • 2 cups shredded sharp cheddar cheese, divided
  • 2 cups diced or shredded cooked chicken

Instructions

  1. Cube 2 cups of cooked chicken. Season with salt, black pepper, garlic powder, and onion powder.
  2. In a large skillet, heat olive oil over medium-high heat. Cook chicken until golden brown, about 5-7 minutes. Remove and set aside.
  3. Steam broccoli until tender-crisp, about 2-3 minutes, then drain.
  4. In the same skillet, melt butter or olive oil. Cook sliced onion until translucent, about 4-5 minutes.
  5. Add minced garlic and cook for another minute until fragrant.
  6. Sprinkle flour over the onion and garlic mixture, stirring to form a paste. Cook for 1-2 minutes.
  7. Gradually whisk in chicken stock and milk, cooking until the sauce thickens, about 5-7 minutes.
  8. Stir in Greek yogurt and seasonings until smooth and creamy.
  9. Return to low heat and gradually add half of the cheeses, stirring until melted.
  10. Fold in the sautéed chicken and steamed broccoli until well coated in the creamy sauce.
  11. Transfer the mixture to a greased baking dish, spreading it evenly.
  12. Combine panko breadcrumbs, Parmesan cheese, and the remaining shredded cheese. Top the casserole with this mixture.
  13. Preheat oven to 375°F (190°C) and bake for 25-30 minutes until bubbly and golden brown.
  14. Let rest for 5-10 minutes before serving.

Notes

For extra flavor, add diced jalapeños or swap out broccoli for other veggies like spinach or cauliflower. Rotisserie chicken is a great shortcut.
