A savory chicken dumpling soup that brings warmth and comfort, perfect for cozy evenings.

Ingredients

  • 1 whole chicken (34 lbs)
  • 8 cups water
  • 1 onion, chopped
  • 3 carrots, sliced
  • 3 celery stalks, chopped
  • 2 cloves garlic, minced
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp thyme
  • 2 cups flour
  • 1 tbsp baking powder
  • 1/2 tsp salt
  • 3 tbsp butter
  • 3/4 cup milk

Instructions

  1. Place the whole chicken in a large pot with water, chopped onion, sliced carrots, chopped celery, minced garlic, salt, pepper, and thyme.
  2. Turn the heat on high and bring the pot to a boil.
  3. Once boiling, reduce the heat and let it simmer for 60 minutes.
  4. After an hour, carefully remove the chicken from the pot. Allow it to cool, then shred the meat, discarding the skin and bones.
  5. Return the shredded chicken back to the pot of broth, stirring to combine.
  6. In a bowl, mix together the flour, baking powder, and salt. Cut in the butter until the mixture resembles coarse crumbs.
  7. Stir in the milk to form a soft dough, mixing until just combined.
  8. Using a tablespoon, drop the dumpling batter into the simmering soup.
  9. Cover the pot and let the dumplings cook for 15 minutes without lifting the lid.
  10. After 15 minutes, serve the soup hot with chicken, vegetables, and fluffy dumplings!

Notes

For extra flavor, sauté the vegetables in butter before adding the chicken. Use skinless chicken pieces to lighten the recipe, or rotisserie chicken to save time.
