A delightful blend of sweet and savory flavors with tender chicken simmered in a tropical pineapple sauce.

  • 4 pieces boneless, skinless chicken breasts
  • 1 cup fresh pineapple chunks
  • 1/4 cup low-sodium soy sauce
  • 1/4 cup brown sugar
  • 2 tsp fresh ginger, grated
  • 3 cloves garlic, minced
  • 1 tbsp cornstarch (optional)
  • 2 pieces green onions, sliced (for garnish)

Instructions

  1. Prepare your ingredients – Dice your fresh pineapple into chunks, grate the ginger, and mince the garlic.
  2. Combine sauce components – In a medium bowl, mix together the low-sodium soy sauce, brown sugar, grated ginger, and minced garlic.
  3. Place chicken in slow cooker – Layer the chicken breasts at the bottom of your slow cooker.
  4. Add pineapple and sauce – Pour the pineapple chunks over the chicken and the mixed sauce over it.
  5. Slow cook to perfection – Set the slow cooker on low for 6 to 8 hours or high for 3 to 4 hours.
  6. Thicken the sauce (optional) – Mix cornstarch with a little water to make a slurry and stir it into the slow cooker about 30 minutes before serving.
  7. Garnish and serve – Remove the chicken to a plate, drizzle sauce over the top, and garnish with sliced green onions.

Notes

For a lighter dish, replace chicken breasts with skinless thighs. You can also experiment with adding bell peppers or carrots.
