  • 1 can green enchilada sauce
  • 4 cups chicken broth
  • 1 can diced tomatoes
  • 1 can black beans, rinsed and drained
  • 1 cup corn
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • 1 cup chopped cilantro
  • Lime wedges for serving
  • Tortilla chips for garnish

Instructions

  1. In a large pot, combine shredded chicken, green enchilada sauce, chicken broth, diced tomatoes, black beans, corn, cumin, and garlic powder. Stir to blend them seamlessly.
  2. Bring the mixture to a boil over medium-high heat, then reduce the heat to a simmer and let it cook for 20-30 minutes.
  3. Stir in the chopped cilantro right before serving.
  4. Serve the soup hot, adding lime wedges and crunchy tortilla chips on top.

Notes

Use rotisserie chicken for quicker prep. Adjust spice levels or proteins as per preference.
