A comforting dish of succulent turkey meatballs infused with aromatic spices, served over fluffy lemon herb rice.

Ingredients

  • 1 pound ground turkey
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup chopped fresh parsley
  • 1 egg
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 1 cup rice
  • 2 cups chicken broth
  • 1 lemon (zested and juiced)
  • Olive oil for cooking

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Mix the ground turkey, breadcrumbs, Parmesan, parsley, egg, garlic, oregano, salt, and pepper in a large bowl.
  3. Shape the mixture into small meatballs, about the size of a golf ball, and place on a baking sheet lined with parchment paper.
  4. Bake for 20-25 minutes, or until fully cooked and browned.
  5. Bring the chicken broth to a boil in a saucepan.
  6. Add rice, lemon zest, and juice to the boiling broth.
  7. Simmer covered for 18-20 minutes until fluffy.

Notes

Consider garnishing with extra parsley and a drizzle of olive oil. Pair with roasted vegetables or a Greek salad.
