Decadent cheesecake bars with a creamy base, crunchy pistachios, and sweet honey that captures the essence of Greek desserts.

  • 1 1/2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 2 cups cream cheese, softened
  • 1/2 cup Greek yogurt
  • 1/2 cup honey
  • 1/4 cup sugar
  • 3 large eggs
  • 1 tsp vanilla extract
  • 1 cup chopped pistachios
  • Extra pistachios and honey for topping

Instructions

  1. Preheat the oven to 325°F (163°C).
  2. Mix the graham cracker crumbs with melted butter until combined.
  3. Press the mixture firmly into the bottom of the baking dish to form the crust.
  4. Beat the softened cream cheese until smooth.
  5. Add Greek yogurt, honey, and sugar, and mix until combined.
  6. Incorporate the eggs one at a time, mixing after each addition.
  7. Pour the cheesecake mixture over the crust and smooth the top with a spatula.
  8. Bake for about 30-35 minutes until the center is set but slightly jiggly.
  9. Allow to cool completely, then refrigerate for at least 4 hours or overnight.
  10. Cut into bars and serve topped with additional honey and chopped pistachios.

Notes

Ensure cream cheese and eggs are at room temperature for a creamy filling. Store leftovers in an airtight container in the fridge for up to a week.
