Ingredients

  • 1 can chickpeas, drained and rinsed
  • Feta cheese, crumbled
  • Diced cucumber
  • Chopped tomato
  • Chopped red onion
  • Fresh parsley, chopped
  • Olive oil
  • Paprika
  • Salt
  • Pepper

Instructions

  1. Warm tortillas or flatbreads in a skillet until flexible and lightly toasted.
  2. Rinse and drain chickpeas, ensuring they are ready to soak up those delicious seasonings.
  3. Dice the cucumber, tomato, and red onion, and chop the parsley.
  4. Add chickpeas to a bowl and season with paprika, salt, pepper, and a drizzle of olive oil. Mix gently to coat.
  5. Mix in the diced cucumber, tomato, onion, and parsley.
  6. Crumble feta over the mixture and gently fold to combine.
  7. Spoon filling into each warm wrap, fold tightly, and serve warm.
