Greek Chicken Pearl Couscous Soup

A comforting and hearty soup made with tender chicken and pearl couscous, infused with Mediterranean flavors.

Ingredients

  • 1 lb chicken breast, diced
  • 1 cup pearl couscous
  • 6 cups chicken broth
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 cup carrots, diced
  • 1 cup celery, diced
  • 1 can (15 oz) diced tomatoes
  • 1/2 cup Kalamata olives, sliced
  • 1/4 cup fresh parsley, chopped
  • 1 tsp dried oregano
  • Salt and pepper to taste
  • Lemon wedges for serving

Instructions

  1. In a large pot, heat some oil over medium heat and sauté the onions and garlic until translucent.
  2. Add the diced chicken to the pot and cook until browned.
  3. Stir in the carrots, celery, and oregano, and cook for another 5 minutes.
  4. Pour in the chicken broth and diced tomatoes, then bring to a simmer.
  5. Add the pearl couscous and cook according to package instructions, about 10 minutes.
  6. Stir in the olives and parsley, season with salt and pepper to taste.
  7. Serve hot with lemon wedges on the side.

Notes

Great with crusty bread or a light Greek salad. Stores well in the fridge for 3-4 days.
