A cozy and elegant dish featuring tender chicken breasts stuffed with a savory mix of Gouda cheese and earthy mushrooms, perfect for impressing guests or enjoying a family dinner.

  • 4 boneless, skinless chicken breasts
  • 1 cup Gouda cheese, shredded
  • 1 cup mushrooms, finely chopped
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • 1 teaspoon dried thyme
  • 1 cup breadcrumbs (optional for coating)
  • Fresh parsley, for garnish

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a skillet, heat olive oil over medium heat. Add minced garlic and finely chopped mushrooms, and cook until the mushrooms are tender, about 5 minutes.
  3. Remove from heat and stir in shredded Gouda cheese, salt, pepper, and dried thyme.
  4. Carefully cut a pocket in each chicken breast.
  5. Spoon the mushroom and cheese mixture into each chicken pocket.
  6. Coat the stuffed chicken breasts with breadcrumbs if using.
  7. Place in a greased baking dish and bake for 25-30 minutes until cooked through and golden brown.
  8. Garnish with fresh parsley before serving.

Notes

Check the internal temperature of the chicken to ensure it reaches 165°F (75°C). You can also add chopped spinach or sun-dried tomatoes to the stuffing for extra flavor.
