  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 1 large egg
  • 1 tablespoon lemon zest
  • 2 tablespoons lemon juice
  • 1 teaspoon vanilla extract
  • 1 cup powdered sugar
  • 2 tablespoons lemon juice (for glaze)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Whisk together the flour, baking powder, and salt in a bowl.
  3. Cream together the softened butter and granulated sugar until light and fluffy.
  4. Beat in the egg, lemon zest, lemon juice, and vanilla extract until well combined.
  5. Gradually add the dry ingredients to the creamy mixture and stir gently until just combined.
  6. Using a tablespoon, drop balls of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  7. Bake in the preheated oven for 10-12 minutes or until the edges are lightly golden.
  8. While the cookies cool, whisk together the powdered sugar and lemon juice until smooth for the glaze.
  9. Drizzle the glaze over the cooled cookies and let it set before serving.

Notes

Store in an airtight container at room temperature for up to a week. Freeze unglazed cookies for longer storage.
