Ingredients

  • 4 chicken breasts
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste
  • 2 cups mashed potatoes (pre-made or homemade)
  • 1/2 cup heavy cream
  • 1/4 cup butter

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Combine olive oil, minced garlic, dried thyme, dried rosemary, salt, and pepper.
  3. Rub the mixture onto each chicken breast, ensuring they’re coated.
  4. Place the seasoned chicken breasts in a baking dish and bake for 25-30 minutes.
  5. While the chicken is baking, boil potatoes in salted water until tender, then drain.
  6. Mash the cooked potatoes with heavy cream and butter until creamy.
  7. Serve the chicken with generous servings of creamy mashed potatoes.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days. Rehydrate mashed potatoes with milk or cream if they thicken.
