A comforting dish of glazed chicken breast served over creamy mashed potatoes with a rich pan sauce.

  • 4 chicken breasts
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 tablespoon fresh herbs (such as thyme or rosemary), chopped
  • Salt and pepper to taste
  • 1 cup chicken broth
  • 2 tablespoons butter
  • 2 pounds potatoes, peeled and chopped
  • 1/2 cup heavy cream

Instructions

  1. Season the chicken breasts generously with salt, pepper, minced garlic, and fresh herbs.
  2. Heat the olive oil in a large skillet over medium-high heat.
  3. Brown the chicken breasts for about 6 minutes on each side until browned and cooked through.
  4. Remove the chicken from the skillet and keep warm on a plate.
  5. Add the chicken broth into the hot skillet, scraping up any browned bits.
  6. Stir in the butter until melted and the sauce thickens slightly, then remove from heat.
  7. Boil the chopped potatoes in a separate pot until tender, about 15-20 minutes.
  8. Drain the potatoes and mash them with heavy cream, remaining salt, and pepper until smooth.
  9. Assemble by plating mashed potatoes, topping each with a chicken breast, and drizzling with pan sauce.

Notes

Serve with a side salad and a glass of white wine for a complete meal.
