  • 2 cups chicken breast, diced
  • 4 medium potatoes, peeled and cubed
  • 1 cup heavy cream
  • 4 cloves garlic, minced
  • 1 cup shredded cheese (cheddar or mozzarella)
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. In a large skillet, heat olive oil over medium heat. Add the diced chicken and season with salt and pepper. Cook until the chicken is browned and cooked through, about 7-10 minutes.
  2. Add the minced garlic and cook for 1 minute until fragrant.
  3. Stir in the heavy cream and bring to a simmer.
  4. Add the cubed potatoes to the skillet and mix well. Cover and cook for about 15-20 minutes, or until the potatoes are tender.
  5. Stir in the shredded cheese and let it melt into the creamy sauce.
  6. Remove from heat and garnish with fresh parsley before serving.
