A comforting twist on the classic French onion soup, this grilled cheese sandwich features layers of gooey cheese and caramelized onions, perfect for any meal.

  • 4 slices of bread
  • 2 tablespoons butter
  • 1 large onion, thinly sliced
  • 1 cup Swiss cheese, shredded
  • 1 cup Gruyère cheese, shredded
  • Salt and pepper to taste
  • 1 tablespoon balsamic vinegar (optional)
  • Fresh thyme for garnish (optional)

Instructions

  1. In a skillet, melt 1 tablespoon of butter over medium heat. Add the sliced onions, salt, and pepper. Cook, stirring frequently, until the onions are caramelized, which takes about 15-20 minutes. If you want to kick up the flavor, add the balsamic vinegar during the last 1-2 minutes of cooking and let it mingle with the onions.
  2. Remove the beautifully caramelized onions from the skillet and set them aside. You’ll be layering them on the sandwich soon!
  3. In the same skillet, add another tablespoon of butter and toast two slices of bread on one side until they’re golden brown.
  4. Flip the toasted bread slices and layer half of the shredded Swiss and Gruyère cheeses on top.
  5. Generously add the caramelized onions over the cheese, followed by the remaining cheeses. Top with the other two slices of bread, with the toasted side inwards.
  6. Cook until the bottom is a beautiful golden brown, then carefully flip the sandwich and cook the other side until it’s golden and the cheese is gloriously melted.
  7. Remove from the skillet, slice, and if you like, garnish with fresh thyme for added color and flavor.

Notes

For a gluten-free option, use gluten-free bread. To enhance caramelization, cook onions slow and ensure they have space in the pan.
