Delicious and nutritious banana oatmeal bars perfect for busy mornings.

Ingredients

  • 2 ripe bananas, mashed
  • 1 cup rolled oats
  • 1/4 cup almond butter or peanut butter
  • 1/4 cup honey or maple syrup
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1/2 cup chopped nuts (optional)
  • 1/2 cup chocolate chips (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and line an 8×8-inch baking pan with parchment paper.
  2. In a large bowl, mix the mashed bananas, almond butter, honey, and vanilla extract until well combined.
  3. Stir in the rolled oats, cinnamon, and salt. Optionally add in nuts or chocolate chips.
  4. Pour the mixture into the prepared baking pan and spread it evenly.
  5. Bake for 20-25 minutes, or until golden brown.
  6. Let cool completely before slicing into bars.

Notes

For riper bananas, look for those that are heavily speckled. Experiment with different nut butters for unique flavors.
