These freezer breakfast burritos are easy to make, customizable, and perfect for rushed mornings.

Ingredients

  • 1 cup cooked and crumbled breakfast sausage
  • 1 cup shredded cheese
  • 1 cup diced bell peppers
  • 1 cup diced onions
  • 1 cup cooked potatoes or hash browns
  • 8 large flour tortillas
  • Salt and pepper to taste
  • Cooking spray or oil

Instructions

  1. Whisk the eggs and season with salt and pepper in a large bowl.
  2. Sauté the onions and bell peppers in a skillet over medium heat until soft.
  3. Add the cooked sausage and potatoes to the skillet, mixing well.
  4. Pour the whisked eggs into the skillet, stirring gently until fully cooked.
  5. Remove from heat and stir in the cheese.
  6. Divide the mixture evenly among the tortillas.
  7. Roll up each burrito tightly, tucking in the ends.
  8. Wrap each burrito in foil and place in a freezer-safe bag.
  9. To reheat, remove the foil, wrap in a damp paper towel, and microwave until heated through.
